Blueberry-Banana Muffins

This is a super easy recipe that I've been making for years now. The blueberries can be substituted for just about anything (dried fruit or chocolate chips are great options as well). This recipe will make 12 decently sized muffins or 18 slightly smaller ones. They're filling, so I like to have them along with my breakfast coffee in the morning. Let me know how they come out! Blueberry-Banana Muffins

Ingredients
1/3 of a cup of vegetable oil
1 cup of packed brown sugar
2 eggs
2 large ripe bananas (mashed)
2 cups of unbleached white flour
1 tsp of baking powder
1 tsp of baking powder
1/2 tsp of salt
2 tsp of vanilla extract
1 cup of frozen blueberries






Directions
1. Preheat oven to 350ยบ F. 
2. Oil or spray a muffin tin or use paper liners.



 3. In a large bowl, either with an electric mixer or by hand, beat the oil, sugar, eggs, and bananas until well-blended.

4. Combine the flour, baking powder, baking soda, and salt. 







5. Fold the dry ingredients into the wet ingredients with quick strokes. Be careful not to over mix.
6. Fold in the vanilla and blueberries.

 7. Spoon the batter in the prepped muffin pan and bake for 20 minutes (or until an inserted knife comes out clean).
