Blueberry Crumble Bars

Blueberry Crumble Bars

Ingredients
2 sticks of butter, softened, plus more for greasing the pan
1 1/3 cups of all-purpose flour
1 cup of whole wheat flour
1/2 cup of granulated sugar
1/2 cup of brown sugar
1 cup of oats
1/4 teaspoon of fine sea salt
1 egg, beaten
1 cup of preserves (I used blueberry!)
1 tablespoon of confectioner's sugar

Directions
Preheat the oven to 350ยบ F. Butter a 8 x 8 or 9 x 9 square baking pan.

Add the dry ingredients to your stand mixer. (Don't have a stand mixer? No worries--- the recipe works fine with a handheld mixer as well.) Add in the butter and egg and beat at a low speed. Stop occasionally to scrape the edges of the bowl so that all of the ingredients get mixed in. Continue processing until the mixture resembles coarse crumbs. Separate 2 cups of the mixture and set aside. 

Press the remaining crumb mixture into the bottom of your greased pan to create the first layer for the bars. Then, spread your preserves over the layer, leaving a 1/2-inch border. Sprinkle the remaining 2 cups of crumbs over the preserves. 

Bake until browned, 40-50 minutes. Wait until completely cool (I waited around 2 hours) before cutting into the bars. Sprinkle some confectioners sugar on the bars and dig in!
